ALMONDS 2 WAYS: SPICY SAVOURY AND HONEY GLAZED

Almonds make a great snack for foodies. Fabulous for on the go, with a piece of fruit, to add to yoghurt in the morning, or with that glass of wine in the evening. With these sweet and savoury variations, snack time never gets boring.

SPICED SAVOURY ALMONDS AND HONEY GLAZED ALMONDS


Honey glazed almonds

Ingredients

2 tsp coconut oil

1 tablespoon raw honey

200 gram almonds, roasted

 

Spiced savoury almonds

Ingredients

1 tbsp oilve oil

2 tsp cumin

2 tsp curry powder

1/2 tsp cayenne pepper

1/2 tsp cinnamon

200 gram almonds, roasted

 

Method

1. For these recipes, I oven roasted the almonds first: divide the almonds over a baking sheet and roast them at 180 degrees for about 15 minutes (until they smell great). This is, however, not completely necessary and you can follow the next steps with raw almonds too.

2. For the sweet almonds: melt the coconut oil and honey with a tablespoon of water together in a small pan.

3. In a non-stick frying pan, dry toast the almonds for a few minutes (until warm). Then slowly pour the honey and coconut mixture over the almonds and cook for about 5 minutes, stirring occasionally.

4. Put the almonds on a large baking sheet. They will stick together in clumps. Once cooled down slightly, break the almonds apart into individual nuts before letting them cool down completely.

5. For the savoury almonds: in a small bowl, mix the olive oil and spices together. Heat a frying pan.

6. Dip the almonds in the bowl with the oil and spice mixture and cook in the pan for about 10 minutes.

7. Let the almonds cool down completely before storing in an airtight container.
