ROASTED BEET SALAD WITH ROCKET, FETA AND SESAME SEEDS

Beetroot is one of my favourite vegetables. It is very versatile to cook with and taste deliciously sweet when roasted or steamed. Beetroot gives your dishes a beautifully vibrant colour and pairs so well with tangy dressings or salty cheeses.

This salad makes for an excellent light dinner. It is full of flavour and the warm, roasted beetroot also ensures it is equally delicious to eat warm in winter or cooled and chilled in summer.

ROASTED BEET SALAD WITH ROCKET, FETA AND SESAME SEEDS


Makes 2 portions

Ingredients

Salad

50 gram rucola

1 tbsp sesame seeds

2 large red beets

2 spring onions

2 tbsp olive oil

1 tsp mixed Italian herbs

 

Dressing

Juice of 1 lime

2 tbsp olive oil

Freshly ground black pepper

1/4 cup of parsley, finely chopped

Method

1. Preheat the oven to 200 degress.

2. Cut the beetroot into small parts and arrange in an oven tray.

3. In a small bowl, mix the olive oil, the chopped spring onions, the herbs and some pepper. Pour this mixture evenly over the beetroot and shake the dish to cover evenly.

4. Bake the beetroot for 45 minutes, stirring every 10 to 15 minutes.

5. Dry toast the sesame seeds for a few minutes in a non stick frying pan.

6. Prepare the dressing by combining all ingredients (lime juice, olive oil, pepper and parsley) and mixing well.

7. Arrange the rucola in a bowl, and top with the roasted beetroot and crumbled feta.

8. Sprinkle with the toasted sesame seeds and serve with the dressing on the side.
