BEET AND OATS ACAI BOWL

On our last trip to the Netherlands, most breakfast places had an acai bowl on their menu, next to the very Dutch cheese sandwiches and “uitsmijters”. As I am not a great drinkable breakfast (smoothie) convert, the acai bowl intrigued me.

This version ticks all the boxes: creamy, smooth, thick, spoonable,  nutritious, fruit, veg, and yummy! A fabulous breakfast or lunch at any day.

Makes 1 large bowl 
Ingredients

1 red beet, cooked

1/4 cup ground almonds

1/4 cup oats

1/2 cup frozen mixed berries

1 tbsp acai powder

1/2 cup rice milk

Method

1. Cook the red beet the evening before and chill in the fridge (or buy a pre-cooked one that you can use immediately).

2. Place all the ingredients except the rice milk in a high bowl or blender proof cup.

3. Blend until smooth.

4. Add a little of the rice milk to the mixture and blend until incorporated. Continue until you reached the consistency that you like.

5. Pour and scoop into bowls and serve with some fresh berries and mint leaves.
