Autumn is very much the start of soup season for me. In our family we all love soups. You can make endless variations and you get an amazing amount of veggies whilst having a warning and filling meal.
Cauliflower couscous. It is another one of these recipes that I have waited ages for to try out. And ultimately extremely enjoyed! This is so incredibly good, it will be on my staples list for sure. It is veg, veg, veg all the way and makes for a warm and very filling and satisfying dish.
It has been a while since I posted a new salad recipe. If pressed for time, we are often quick to resort to old favourites or to a quick selection of cucumber, pepper and celery slices with our proteins. Finally, with some time on my hands and the right ingredients in the fridge, I had time to throw together this beautiful green salad with spinach.
Beetroot is one of my favourite vegetables. It is very versatile to cook with and taste deliciously sweet when roasted or steamed. Beetroot gives your dishes a beautifully vibrant colour and pairs so well with tangy dressings or salty cheeses.
Ugh. I can´t believe it is still winter.. Even though it hasn’t been that harsh, the darkness and cold really get to me. With reserves running low, both of us in open plan offices and with a kid in day care, we are quite susceptible to the occasional cold. This soup is the ideal meal when feeling a bit under the weather. Packed with loads of different vegetables, it is both nutritious and comforting. Yummy. A hot and spicy Asian style broth spiced with Tabasco, ginger and lemon balm with a fresh piece of salmon cooked in it. Whilst easy to make, this dish always put a smile on my face as it is truly delicious, nutritious and full of flavour.
Winters leave me really struggling to eat my “go to salads” and I rather find myself craving something warming when it is cold outside. This lentil and sprouts salad is a nice winter warmer with loads of different colors and punchy middle eastern flavours.
I am always longing for summer. And even though the Northern Hemisphere is in deep dark winter mode currently, this is definitely something to look forward to for summer. Originating from the south of Spain, this cold soup is packed full of raw vegetables. Perfect for a hot summer´s night or for those long awaited early spring days. Plus, it also works perfectly well with the heaters on as a post Christmas recovery meal (not sure about you, but we had plenty of heavy meals over the holiday season).
